Cinnamic aldehyde is also known asβ-phenylacrolein and 3-phenyl-2-propionene. It is a pale yellow to yellow liquid, with strong cinnamon aroma. It is naturally found in plant essential oil such as that of Cinnamicon, laurel leaf, hyacinth, rose, Herba Lysimachiae and so on.
Function & Application of Cinnamic aldehyde:
1.It has the function of sterilization, disinfection and anticorrosion. And it has significant inhibitory activity on the fungus.
The Cinnamic aldehyde has inhibitory activity on Escherichia coli, Bacillus subtilis, Staphylococcus aureus, Staphylococcus albus, Salmonella typhi and paratyphoid, Fraenkel’s diplococcus, Bacillus aerogenes, Bacillus proteus, Bacillus anthracis, Salmonella enteritidis, and Bacillus comma, etc. And the sterilization effect on the gram-positive bacterium is effective.
Cinnamic aldehyde can be used to treat many diseases caused by bacterial infection.

Cinnamic aldehyde is recognized as a safe and non-toxic substance (21 CFR 182.60) by U.S. Food and Drug Administration (FDA). American Flavor and Extract Manufacturers’ Association (FEMA) considers it to be a safe and non-toxic food flavor ingredient (FEMA,1965). Joint FAO/WHO Expert Committee on Food Additives (JECFA) also considers Cinnamic aldehyde safe as a food additive (JECFA No. 656).
