香兰素
香兰素是一种有机化合物，天然存在于香荚兰，也可人工合成制得。呈白色至淡黄色针状结晶，伴有奶香及香荚兰香气。作为世界上第一种被合成的香精，是现代工业最重要的香料之一。
人工合成的香兰素通常分为甲基香兰素和乙基香兰素。甲基香兰素呈白色或微黄色结晶，具有香荚兰香气及浓郁的奶香，是奶油香草香精的主要成份。乙基香兰素为白色至微黄色针状结晶或结晶性粉末，类似香荚兰豆香气，其香气是香兰素的3-4倍，较甲基香兰素更浓。

- 主要的奶香型香料香精成分，广泛运用在各种需要增加奶香气息的调香食品中
- 制药成分，用于生产医药中间体，生产降压药甲基多巴、儿茶酚类药物多巴，以及白内停、敌菌净等
- 粉底香用，可广用于几乎所有香型，如紫罗兰、草兰、葵花、东方香型中。能和洋茉莉醛、异丁香酚苄醚、香豆素、麝香等定香剂、修饰剂与和合剂，也可用于掩盖不良气息
- 用于分析化学，检验蛋白质氮杂茚、间苯三酚及单宁酸
