Aroma Chemicals Scheme
Aroma chemicals refer to a group of chemicals that impart characteristic odor and taste, could be terpenes, ketones, aldehydes, esters, and alcohols etc. The compounds are volatile enough to be transported to the olfactory system. The two main constituents of aroma chemicals are petroleum-based and natural compounds, with a majority market share of 70% and 30%, respectively.
Natural aromatic compounds include plant essential oils (volatile oils from plants), forest extracts (volatile oil monomers from various tree species), and synthetic derivatives prepared from volatile oil raw materials through synthesis. As per relevant studies1, forest extracts account for 53% of worldwide essential oils, while various flowers, plant roots, and wood make up 25%, and citrus fruits contribute 22%.
