香兰素是一种有机化合物，天然存在于香荚兰，也可人工合成制得。呈白色至淡黄色针状结晶，伴有奶香及香荚兰香气。作为世界上第一种被合成的香精，是现代工业最重要的香料之一。 人工合成的香兰素通常分为甲基香兰素和乙基香兰素。甲基香兰素呈白色或微黄色结晶，具有香荚兰香气及浓郁的奶香，是奶油香草香精的主要成份。乙基香兰素为白色至微黄色针状结晶或结晶性粉末，类似香荚兰豆香气，其香气是香兰素的3-4倍，较甲基香兰素更浓。
