香芹酚
香芹酚也称异百里香酚，为百里香酚的同分异构体。由异丙基甲苯用硫酸磺化后经碱熔处理制得。呈液体，伴有百里香味。用作食品香精及皂用香精配方中。根据相关研究表明，香芹酚对黑曲霉的抑制效果大于牛质油、肉桂醛和柠檬醛。可作为天然抑菌剂应用于食品加工中。
